Spicy Mac ‘n’ Cheese


I have finally got my hands on Niomi Smart’s cookbook, Eat Smart and I am asking myself why I didn’t pick it up sooner. It has so many delicious recipes that I would actually make and the imagery is right up my alley. I have purchased so many recipe books over the years and I usually make 2-5 recipes max from each book, however there are 18 recipes so far that I want to try. #Winning. 

Last week I was looking for something to make for dinner and I came across a video of Niomi making the Mac ‘n’ Cheese from one of the recipes in her book. Mac ‘n’ Cheese was a staple in my childhood home and I always wanted to make it as an adult, however I used to gravitate towards meals that took the least amount of time. Since moving towards a plant based lifestyle, I have been a little skeptical about vegan mac n cheese until I watched the video.

She topped hers with roasted tomatoes however as a child the best thing about mac n cheese was the crispy breadcrumbs on top. I made my own spicy breadcrumbs and stirred them through the pasta as well as sprinkling them on top. All you need is 1 tsp sesame seeds, 1/2 tsp hot chilli powder, 1 slice of bread and a pinch of salt. Place all ingredients into the blender until they become breadcrumb texture.

The cheesy sauce is quite sweet because of the pumpkin and when you add the chilli breadcrumbs to it, it becomes this deliciously creamy and sweet but a little spicy pasta dish. It is amazing! You could also double the recipe and put some aside for lunch the next day.
