Avocado Breakfast Bruschetta

Avo toast is the best breakfast and if I could have it every day, I would and a hash brown on the side is just the cherry on top. Heaven! I came across the idea of bruschetta tomatoes with smashed avo on Pinterest and knew I had to re-create my own. I have always preferred a plain bruschetta with tomatoes, garlic, red onion and basil which is what I have been adding to my smashed avo recently.



You will need:

  • 2 pieces of toast
  • 1 ripe avocado – smashed
  • 1 garlic clove – chopped finely
  • 8 cherry tomatoes – cut in half, then sliced into small chunks
  • 1 large basil leaf chopped into small pieces
  • 2 half slices of red onion, diced


Mix the garlic into the smashed avo and pile onto your toast. Add the tomatoes, basil and onion together into a bowl and mix well. Scoop evenly on top of the smashed avo and serve!
