P’s Kitchen // Decadent Chocolate Brownies

These vegan brownies are super rich, decadent and really gooey. They don’t set like your typical brownie with a crispy outside and soft inside, they’re just gooey and need to be eaten with a spoon or fork. Other than that, these are definitely a crowd pleaser and would be amazing with coconut or vanilla ice cream and some fresh strawberries or passionfruit.

You will need:

– 1 Medium Sized Ripe Avocado

– 2 Large Bananas

– 200g Dark Chocolate – I like Lindt 70% Dark Chocolate

– 1/2C Coconut Oil

– 1C Almond Meal (ground almonds)

– 1tsp Baking Soda

– 1 1/3C Coconut Sugar


Preheat the oven to 190 degrees C.

Melt chocolate and coconut oil in a pan on a low heat, stirring often to ensure the chocolate does not burn.

Once melted, pour into a mixing bowl and add coconut sugar, almond meal and baking soda and stir through.

Mash avocado and bananas in a bowl, add to the mixture and make sure it is well stirred. When mashing the avocado, make sure you mash it as small as possible otherwise there will be lumps in the mixture. With the banana, there will be some small lumps in the mixture but this is normal and adds a nice little surprise to your brownie.

Pour into a lined baking tray and bake for 28 minutes.

Cool for an hour and cut into pieces. Remember, they don’t turn out line normal brownies and will be very gooey. I find it best to store them in the fridge as they keep their shape better.
